INGREDIENTS:
Acorn Squash
Extra virgin olive oil
Salt + Pepper

Garlic Greens Sauce:
2-3 handfuls of spinach
4-5 cloves of garlic
2 tbsp EVOO
2-3 tbsp tahini
pinch of sea salt
2 jalapeno peppers
3-4 tbsp nutritional yeast

INSTRUCTIONS:
1. preheat your oven to 375F degrees.
2. wash your acorn squash well, then cut off the top and bottom. then in half through the center.
3. remove the insides from your squash, then cut into 1-inch slices.
4. place your slices in a mixing bowl and coat with EVOO, salt and pepper.
5. roast in the oven for 15-20 minutes, until softened.
6. while your acorn squash is roasted, blend your sauce ingredients into a blender until smooth.
7. remove squash from oven, assemble on a plate, and serve with garlic greens sauce! enjoy
